Emily Noble holds a masters degree in nutrition science from the University of Minnesota, where she is currently a doctoral candidate. She aspires to one day become a professor in one of those “artsy liberal arts colleges” where she hopes to teach courses with provocative titles. Emily gathered much of her cooking experience working as a chef traditional sailing vessels (tall ships). She has since taught about food and cooking in many different settings, including classrooms, hospitals, co-ops, local farms, a Native American summer camp, the PBS television program SciGirls, and her blogs “90 salads in 90 days” and “leafy reader”. On the weekends Emily can be found at the Minneapolis Farmers Market, where she works as the on-site events coordinator and emcee.
